Almond Blondies

 
 

These gorgeous, fluffy, and crunchy blondies are a fabulous twist on a traditional brownies. These are super easy to make and are delicious with a scoop of vanilla ice cream! Plus the almonds offer that extra plant-based fibre, nutty taste, and a little bit of texture too.

Ingredients


2 cup packed brown sugar

⅔ cup butter

2 eggs

2 cup all-purpose flour

1 teaspoon baking powder

¼ teaspoon baking soda

1 ½ cup chopped almonds


Method


1.
Preheat oven to 180°C.

In a medium saucepan heat the brown sugar and butter over medium heat until the butter melts and the mixture is smooth, stirring constantly. 

3.
Cool slightly. Stir in the eggs and then stir in the flour, baking powder, and baking soda. 

4.
Spread batter in prepared baking pan. Sprinkle with almonds.

5.
Bake in the preheated oven for 25 to 30 minutes or until a wooden toothpick inserted near centre comes out clean.

6.
Cool slightly in pan on a wire rack. Cut into squares while warm.
