Apple Cinnamon Rolls

 
 

These easy cinnamon rolls from scratch are the perfect weekend bake! Each cinnamon roll is extra soft with the most delicious cinnamon apple filling.

Ingredients


Dough: 344g all-purpose flour  50g granulated sugar 1/2 teaspoon salt. 180ml milk
Salt
45g unsalted butter
2 and 1/4 teaspoons instant yeast
1 large egg, at room temperature

Filling:
2 chopped apples
50g brown sugar (divided) 60g butter 1 tsp vanilla 1-2 tsp of cinnamon powder Optional: handful of chopped dates and/or nuts Coconut yoghurt for icing


Method


1.
Whisk the flour, sugar, yeast and salt together in a large bowl (put salt and yeast in opposite sides of the bowl). Set aside.

Combine the milk and butter together in a pan of heatproof bowl. Heat pot at low heat or microwave until the butter has melted and the mixture is warm to the touch.

Pour mixture into the dry ingredients, add the egg, and stir with a sturdy rubber spatula or wooden spoon (or use a stand mixer).

 Using floured hands, knead the dough for 3 minutes. Cover with a tea towel and let the dough rest for about 10 minutes.

5. For the filling, add apple, butter, cinnamon, 30g of brown sugar and vanilla to a pot and cook at low heat. 

6. Roll the dough and cover with the filling, sprinkle remaining sugar and chopped nuts/dates if adding. Roll, cut and place in a greased baking dish. Leave to rise for 1 hour and then bake at 180C for 25-28 min until golden.

7. Brush with maple syrup and spread coconut yoghurt when they have cooled down a bit.
