Blackberry Porridge
No matter the weather I’m hooked on porridge! This recipe is bursting with delicious seasonal ingredients with a chia jam but you can try with any berries you have in the house plus peanut butter as a final topper.

Ingredients
100g fresh or frozen blackberries
½ tsp chia seeds
45g oats
250ml milk
½ tsp vanilla extract
1 heaped tbsp almond butter
A sprinkle of coconut
chips, chopped nuts, seeds or any of your
favourite crunchy toppers.
Method

Add the blackberries into a microwave safe bowl. Microwave for 3 minutes before removing and stirring in the chia seeds. Microwave for a further 30 seconds, or until thick and jammy.

Meanwhile, combine the oats, milk and vanilla extract in a small saucepan over medium heat. Bring to a simmer, then stir regularly until the porridge reaches your desired consistency.

Pour the porridge out into a bowl and top with the blackberry chia jam, almond butter and a sprinkle of coconut chips, nuts/seeds or whatever you fancy to give it some crunch.
