Coconut Berry Porridge

 
 

Thick and satisfying, topped with juicy berries and full of delicious coconut flavour, this warming porridge bowl is heavenly.

Ingredients


250ml coconut water
50g porridge oats
40g blackberries
30g blueberries
1-2 strawberries, chopped
1 tbsp almond butter
Toppings: pumpkin seeds and flaked coconut


Method


1.
Place the oats and pressed coconut water in a saucepan, and pop over a low heat. Simmer for 6-8 minutes, stirring regularly.

2.
Meanwhile, mash half of the blackberries with a fork, squeezing out some juice.

3.
Pour the cooked porridge into a bowl and top with the fruit. Drizzle with the mashed blackberries and juice, add a dollop of almond butter and sprinkle with the flaked coconut and pumpkin seeds.
