Huevos Rancheros
This huevos rancheros tray bake is a take on the Mexican dish of eggs and spicy tomato sauce on tortillas. It’s the perfect recipe for a Sunday brunch, easy to make, filling and delicious!

Ingredients
200g tortilla chips
1 can of chopped tomatoes
1 can of black beans, drained
1 teaspoon chipotle paste
1 teaspoon smoked paprika
1 teaspoon maple syrup
1/4 teaspoon onion powder
1/2 teaspoon salt
Pepper
3-4 eggs Handful of coriander and cheese 1 avocado, sliced
Method
1.
Mix together chopped tomatoes, chipotle, paprika, maple syrup, salt and pepper, and onion powder.

On a baking dish layer half of the tortilla chips, tomatoes, black beans and repeat.
3.
Using a spoon, make 4 small wells in the mixture, then carefully crack an egg into each.
4.
Add cheese on the sides and bake at 180C for 15-20 min until cheese is melted and eggs are cooked (try to keep the yolks runny).
5.
Finish with coriander and avocado slices.
