Raspberry & Dark Chocolate Muffins

 
 

These delicious muffins are perfect for a weekend bake, it’s a super easy recipe that comes together in less than 5 minutes. They are soft and fluffy, and the delicious raspberry flavour pops with every bite. You’ll love them and your family will too!

Ingredients


300g plain or buckwheat flour 200g almond flour 2 teaspoons baking powder
1 teaspoon baking soda
350ml almond milk
4 tablespoons coconut oil
100g frozen or fresh raspberries
100g chopped dark chocolate
1 teaspoon vanilla powder


Method


1.
Mix flour, almond flour, sugar, vanilla powder, baking powder and baking soda.

2.
Add coconut oil and almond milk and mix well.

3.
Using a spatula, fold in the raspberries and chopped dark chocolate. Feel free to swap raspberries for blueberries or chocolate for dried fruit.

4.
Scoop into muffin cases and bake at 180C for 25-30 min until knife comes out clean.
