Super Green Pasta
Nothing beats a big bowl of pasta and this dish is a perfect crowd pleaser. A creamy one-pot pasta full of fibre, protein, and packed full of greens. This dish contain 6 different types of green veg!

Ingredients
200g wholewheat pasta (4 portions) 1 leek 1 courgette, sliced 1 bunch of basil 2 handfuls of spinach 300ml vegetable stock 200g coconut yoghurt ½ cup edamame beans. ½ cup peas. Salt and pepper Pine nuts and extra basil to finish
Method
1.
Fry the leek and courgette until soft.

Add spinach, basil, vegetable stock, salt, pepper, coconut yoghurt and boil until soft.
3.
Blend until you get a smooth creamy sauce.
4.
Add cooked pasta, edamame beans, peas and give a good mix to coat all the pasta.
5.
Finish with basil leaves and pine nuts.
