BAKED EGG & SWEET POTATO

Ingredients

  • 4 medium sized Sweet Potatoes
  • 1/2 cup fat free Greek Yogurt
  • 1 tsp Fajita spice
  • 1 tsp Coconut Oil
  • 1 red bell Pepper, diced
  • 1/2 red Onion, diced
  • 1 tsp Chili powder
  • 1/2 tsp smoked Paprika
  • 1/2 tsp Cumin
  • a pinch of Salt
  • 1 tin of Black Beans

Ingredients

  • 4 medium sized Sweet Potatoes
  • 1/2 cup fat free Greek Yogurt
  • 1 tsp Fajita spice
  • 1 tsp Coconut Oil
  • 1 red bell Pepper, diced
  • 1/2 red Onion, diced
  • 1 tsp Chili powder
  • 1/2 tsp smoked Paprika
  • 1/2 tsp Cumin
  • a pinch of Salt
  • 1 tin of Black Beans

Instructions

  1. Poke holes in the potato with a fork and bake in oven for 45 minutes
  2. Heat oil in a medium pot over medium heat
  3. Add peppers, onions, chilli powder, paprika, cumin and salt, simmer for 5 minutes
  4. Add black beans, stir to combine and heat through for another 5 minutes
  5. Slice the potato lengthwise down the middle after 45 minutes, create a small space and crack a egg carefully in the middle
  6. Top with 1/3 cup of black bean mixture and 2 tbsp Greek yogurt
