CHICKEN SAUSAGE SPINACH OMELETTE

Ingredients

  • 3 medium eggs
  • 2 chicken sausages
  • 1 tbsp olive oil
  • ½ tsp chilli flakes
  • A handful of spinach
  • 30g mixed seeds

Ingredients

  • 3 medium eggs
  • 2 chicken sausages
  • 1 tbsp olive oil
  • ½ tsp chilli flakes
  • A handful of spinach
  • 30g mixed seeds

Instructions

  1. Cook 2 chicken sausages at 180 degrees Celsius for 20 minutes.
  2. Beat the eggs in a bowl until blended.
  3. Heat the olive oil in a non-stick omelette pan at a medium- high heat, then pour the egg mixture into the pan.
  4. Chop the sausages into circles.
  5. Allow the edges to set and add the sausage and spinach on top of your omelette. Once you can see the whole omelette has set, sprinkle with chilli flakes and mixed seeds and remove from the pan using a large spatula… and it’s ready to eat.
