MINI FESTIVE BITES

Ingredients

  • 3/4 cup of ground almonds
  • 1/2 cup of oats
  • 2 tbsp melted coconut oil
  • 2 medjool dates
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon, 1/2 tsp nutmeg

Ingredients

  • 3/4 cup of ground almonds
  • 1/2 cup of oats
  • 2 tbsp melted coconut oil
  • 2 medjool dates
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon, 1/2 tsp nutmeg

Instructions

  1. Remove any stones from the dates and soak in boiling water for 30 minutes.
  2. In a bowl, combine the ground almonds, oats, cinnamon and nutmeg.
  3. Drain the dates from the water and use a fork to mash them into a caramel like constancy. Add them to the fry mix along with the coconut oil and vanilla.
  4. Use your hands to combine the mixture, and roll into a large ball.
  5. Break the mixture into 8 pieces to roll into balls.
  6. Leave in the fridge to cool. Melt the dark chocolate in a bowl and then dip each of the balls into the chocolate. Rest the chocolate dipped balls on baking paper in the fridge to cool for half an hour. Finish off with a dusting of icing sugar.
