QUINOA FALAFEL

Ingredients

  • 240g chickpeas
  • 1 small white onion
  • 40g quinoa flour (or wholemeal/spelt)
  • Handful of fresh parsley
  • 1/2 tbsp cumin
  • 1 tsp paprika
  • 1 tbsp lemon juice
  • 1 tsp black pepper
  • 1/2 tsp salt
  • 1/2 tsp garlic granules (or 2 cloves)
  • 1/2 tsp baking powder
  • A tsp olive oil or coconut oil

  • 240g chickpeas

  • 1 tsp paprika
  • 1 tbsp lemon juice
  • 1 tsp black pepper
  • 1/2 tsp salt
  • 1/2 tsp garlic granules (or 2 cloves)
  • 1/2 tsp baking powder
  • A tsp olive oil or coconut oil

Instructions

  1. Pre-heat your oven to 200 degrees C (400 F)
  2. Blend all the ingredients in a food processor until they start to combine
  3. Place baking parchment over the tray and drizzle olive oil
  4. Use a spoon to scoop out some of the mixture and roll into a ball using your hands
  5. Put balls on to the baking tray and pressing down slightly to create a slight dip in the middle
  6. You should be able to place 14 falafels on a tray and give them a roll in the oil
  7. Bake for 30 minutes, turning them after 15 minutes and giving them another drizzle of oil
