Greek Style Mezze Bowl

 
 

This is what summer is all about! A light, filling, nourishing bowl of goodness. Super easy to scale if you’re serving a crowd too!

Ingredients


6 cooked falafel
4 tbsp hummus
125g cooked quinoa
1/2 cucumber, diced
20 mini plum tomatoes, diced
20 kalamata olives, cut into ¼’s
Large handful of baby spinach, roughly chopped
Handful of flat leaf parsley, roughly chopped
2 pitta breads, toasted
2 tbsp extra virgin olive oil
2 tbsp lemon juice
Salt and pepper to season


Method


1.
To a small jar add the olive oil, lemon juice, salt and pepper to create a dressing. Shake to combine and set aside.

2.
Add the rest of the ingredients (except the hummus and falafel) to a bowl and lightly mix together to combine. Add the dressing and mix through the salad.

3.
Divide the salad between two bowls.

4.
Top with hummus and the falafel

5.
Serve with a toasted pitta bread on the side cut into finger sized slices.
