  • 6 Eggs
  • Grated Cheddar Cheese
  • Salt
  • Pepper
  • Spinach
  • Low Fat Philadelphia Cheese

Instructions

  1. Beat 6 eggs in a bowl with grated cheddar cheese
  2. Add a pinch of salt and pepper
  3. Add the mixture to a flat (lined with baking paper) baking tray
  4. Add to oven and watch until mixture has cooked through
  5. When omelette is flat and cooled add cream cheese
  6. Add the drained blanched spinach
  7. Apply the salmon, thinly
  8. Remove omelette from tray onto a cloth and roll into a tight long sausage, wrap in foil and leave in the fridge for 1 hour
  9. Unwrap the foil and slice into pieces and serve up!
