SPINACH OMLETTE, SALMON AND PITTA BREAD

Ingredients

  • 2 eggs
  • A handful of spinach
  • 1 tablespoon of olive oil
  • 1 slice of smoked salmon
  • 1 mini wholegrain pitta bread

Ingredients

  • 2 eggs
  • A handful of spinach
  • 1 tablespoon of olive oil
  • 1 slice of smoked salmon
  • 1 mini wholegrain pitta bread

Instructions

  1. Beat the eggs in a bowl until blended.
  2. Heat the olive oil in a non-stick omlette pan at a medium- high heat, then pour the egg mixture into the pan
  3. Allow the edges to set and add your spinach on top of your omlette.
  4. Once you can see the whole omlette has set, remove from the pan using a large spatula… you can then fold it in half as shown in the picture
  5. Serve up with the salmon and pitta bread. (You may prefer to toast the pitta)
