SWEET POTATO BROWNIES

Ingredients

  • 6 medium sized Sweet Potatoes pre-baked in the oven
  • 3 tbs Coconut Oil
  • Almond Nut Butter 1/2 jar
  • 4 tbs Brown Rice Syrup
  • 4 tbs Cacao Powder
  • 1 tbs Cacao Nibs

Ingredients

  • 6 medium sized Sweet Potatoes pre-baked in the oven
  • 3 tbs Coconut Oil
  • Almond Nut Butter 1/2 jar
  • 4 tbs Brown Rice Syrup
  • 4 tbs Cacao Powder
  • 1 tbs Cacao Nibs

Instructions

  1. Pre-heat the oven to 180'c
  2. Melt your coconut oil, almond butter with your rice syrup syrup in a small saucepan.
  3. In a large bowl add the cooked sweet potato and mash the contents with the nuts butter and syrup, taste and check it is to your liking, add more honey if not sweet enough and nut butter for a fudge like texture.
  4. Add the Cacao powder, if you prefer it to be more chocolatey add more and mix in with Cocoa powder
  5. Pour the mixture into a greased baking dish and bake for 20 minutes
  6. Check the mixture is cooked by piercing with a knife
  7. Serve with some coconut yoghurt and dust with Cacao powder
