VEGAN MINCE PIES

Ingredients

  • 1 1/2 cup oats
  • 1 cup ground almonds
  • 1 tsp vanilla
  • 6 medjool dates, pitted
  • 3 tbsp butter or coconut oil, room temperature
  • 1 1/2 cup chopped apples
  • 1/2 cup fresh cranberries
  • 1/3 cup dried apricots
  • 1/4 cup orange zest
  • 1 tbsp fresh lemon juice
  • 1 tsp ground ginger, 1 tsp cinnamon, 1 tsp nutmeg
  • 1/2 cup of apple juice

Ingredients

  • 1/2 cup fresh cranberries
  • 1/3 cup dried apricots
  • 1/4 cup orange zest

  • 1 tsp ground ginger, 1 tsp cinnamon, 1 tsp nutmeg
  • 1/2 cup of apple juice

Instructions

  1. Preheat your oven to 180C and grease a muffin tray with coconut oil
  2. Start by preparing your mince pie filling. Add the chopped apples, cranberries, apricots, orange seat, lemon juice, mixed spices and apple juice into a pan and bring to a low heat.
  3. Cover the pan and allow to simmer for 30 mins on a low heat.You can stir the filling occasionally. You can turn the heat off once the fruit is cooked and the juice has been absorbed.
  4. Whilst the filling is simmering, you can start making the mince pie base.Remove any stones from the dates, and leave to soak for half an hour. Drain the dates and cut into small pieces, and use a fork to mix them into a caramel like consistency.
  5. In a bowl, hold together the dates, oat, ground almonds, vanilla and butter, until you a achieve a dough like consistency. Roll the dough between two sheets of baking paper, and then cut into circles to mould into your prepared baking tray.
  6. Once you've moulded these into the tray, bake in the oven for 10 minutes. Remove them from the oven and scoop in your filling so it is level with the edge of the moulds.
  7. Roll out the leftover dough mix and cut into circles that will cover the top of the mince pies– add these on top of the mince pies. Bake in the oven for an additional 12 minutes.
  8. Once golden, take out of the even and allow to cool before taking them out of the baking tray.
