VEGGIE COMBO, FETA AND CHICKEN

Ingredients

  • 1 chicken fillet
  • 1/3 of cup of chickpeas
  • ¾ of a cup of cubed butternut squash
  • ½ a courgette
  • A few chunks of feta cheese
  • 1 Tablespoon Of Olive Oil

Ingredients

  • 1 chicken fillet
  • 1/3 of cup of chickpeas
  • ¾ of a cup of cubed butternut squash
  • ½ a courgette
  • A few chunks of feta cheese
  • 1 Tablespoon Of Olive Oil

Instructions

  1. Cut your chicken fillet into 3 slices. Cut up and prepare your veg and butternut squash, ready to add to the pan when ready
  2. Heat a non stick pan over a medium to high heat and add the olive oil
  3. Place the sliced chicken in the pan and allow to cook for around 8 minutes, using a wooden to turn the fillets half way through
  4. Add the butternut squash cubes, chickpeas, courgette and spinach and cook for another 5 minutes
  5. Once cooked, remove from the pan and serve up in a bowl. Finish off with a few chunks of feta
