Apple & Blackberry Loaf

Essential Ingredients

225g + 1 tsp self-raising flour
1 tsp baking powder
140g caster or coconut sugar
1 tsp cinnamon
90ml sunflower oil
180ml plant-based milk
1 tsp vanilla essence
1 large apple, peeled and chopped small
150g blackberries
Glaze:
65g icing sugar
2-3 tsp water
To serve: fresh mixed berries

Directions

  1. Preheat the oven to 160Fan/180*C and line and grease a loaf tin.
  2. Sift the 225g flour into a large mixing bowl and stir in the baking powder, sugar and cinnamon.
  3. In a second bowl, stir together the sunflower oil, milk and vanilla essence. Pour the wet mixture into the flour and stir to combine. Do not over mix.
  4. Toss the blackberries with 1 tsp flour.
  5. Fold in the chopped apple and blackberries. Pour into the loaf tin and bake for 50-55 minutes or until golden brown and an inserted skewer comes out clean.
  6. Allow to cool fully on a wire rack while you prepare the icing by stirring together the icing sugar with 2 tsp of water and add more as needed.
  7. Drizzle the icing sugar glaze over the cooled cake and decorate with fresh mixed berries.
