Berry & Banana Porridge

Essential ingredients

100g oats
500ml oat or almond milk
2 tbsp coconut yoghurt
1 banana
1 tsp coconut oil
½ tsp cinnamon
1 tsp syrup
200g raspberries and/or strawberries
To serve: extra berries, extra syrup, peanut butter

Directions

  1. Add the oats and milk to a small saucepan and simmer gently for 5-10 minutes until thick and creamy.
  2. Add the berries to a small saucepan, add a splash of hot water and simmer for a few minutes until warm.
  3. Slice the banana into half lengthways and then again to make 4 pieces. Heat the coconut oil in a frying pan, add the banana and fry for a couple of minutes, flip over and fry on the other side. Add the cinnamon and syrup and cook until caramelised.
  4. Stir the warm berries and coconut yoghurt into the cooked porridge.
  5. Serve the porridge topped with extra berries, the banana, some syrup and peanut butter.
