Baked Apple Porridge

Essential ingredients

1 apple, cored and cubed
1 ½ tbsp melted coconut oil
1 tbsp coconut sugar
1 tsp cinnamon
100g oats
500ml almond or oat milk
1 tsp vanilla
2 tbsp almond butter
30g dark chocolate, chopped
To serve: pomegranate


  1. Preheat the oven to 160Fan/180*C and add the apple, coconut oil, coconut sugar and cinnamon to a small oven-proof dish. Stir to coat the fruit and then bake for 20-30 minutes until soft.
  2. Gently warm together the oats, milk and vanilla until thick and creamy.
  3. Divide the porridge between two bowls and top with the warm baked apples and pears. Drizzle over the almond butter and add the chopped dark chocolate. Add on some pomegranate, too.
