Essential Ingredients

250ml coconut water
50g porridge oats
40g blackberries
30g blueberries
1-2 strawberries, chopped
1 tbsp almond butter
Toppings; pumpkin seeds and flaked coconut

Directions

  1. Place the oats and pressed coconut water in a saucepan, and pop over a low heat. Simmer for 6-8 minutes, stirring regularly.
  2. Meanwhile, mash half of the blackberries with a fork, squeezing out some juice.
  3. Pour the cooked porridge into a bowl and top with the fruit. Drizzle with the mashed blackberries and juice, add a dollop of almond butter and sprinkle with the flaked coconut and pumpkin seeds.
