Festive Energy Balls

A Simple Way To Eat Plant-Based

Essential ingredients

125g nuts of choice (I went for 75g almonds, 50g pecans)

100g dried figs

80g dried apricots

50g dried cranberries

½ tsp cinnamon

½ tsp all spice

½ tsp ginger

1 tbsp maple syrup

Zest 1 orange

50g dark chocolate, melted

Directions

  1. Blitz the nuts in a food processor, and once they have made a chunky flour add in the figs and blitz for another minute before adding in the rest of the ingredients (except the dark chocolate).
  2. Process for another minute. The mixture should be sticky but not too wet, with some chunky bits remaining.
  3. With your hands, mould the mixture into balls and place in the fridge to firm up, for at least 2 hours.
  4. Once set, decorate with melted dark chocolate, mint and berries!
