Pea & Avocado Toast

200g frozen peas, thawed
1 bunch fresh coriander, leaves and stem (10-15g)
1 garlic clove
1 tbsp lemon juice
1 tbsp olive oil
Salt and pepper
4 tbsp mixed seeds/pine nuts
2-4 avocado, sliced
4-8 slices toast
To serve: pomegranate, chilli flakes, coconut yoghurt
