Strawberry Granola Muffins

Essential Ingredients

100g unsalted butter, softened
140g soft light brown sugar
2 tsp vanilla extract
2 large eggs
150g natural yoghurt
250g self-raising flour
150g strawberries
Handful of granola


  1. Preheat the oven to 180°c fan assisted/200°c/gas 6 and line a 12-hole muffin tin with paper cases.
  2. Cream together the butter and sugar until pale and fluffy. Add the eggs, yoghurt and vanilla extract and mix until combined.
  3. Gently fold the flour into the wet mixture, being careful not to over mix. Finally, stir through the chopped strawberries. Divide the mix between the muffin cases and top each one with a sprinkle of granola.
  4. Bake for 18-22 minutes, or until golden and a cocktail stick inserted into the centre comes out clean.
