A Simple Way To Eat Plant-Based

Essential ingredients

1 pack (165g) of medjool dates

3 tbsp nut butter of choice

50g nuts of choice, crushed (e.g. almonds, peanuts, pistachios)

100g dark chocolate

1 tsp coconut oil

Directions

  1. If they are not already pitted, carefully pit the dates, keeping them whole.
  2. Chop up the chocolate and place it in a bowl with the coconut oil. Heat it in the microwave for 60-90 seconds, until it is completely melted. Set aside.
  3. Carefully slice each date length ways to open it up, but be careful not to slice into the other side of the date, as you want it to stay intact.
  4. Spoon a teaspoon of your nut butter of choice into the middle of the date. If you want, you can add some nuts into the middle too. I sprinkled some chopped peanuts into the peanut butter dates, and for the almond butter ones I popped in a whole almond.
  5. Carefully take each date and cover them in a thin layer of the melted chocolate. Set down on a baking tray, and sprinkle with some of the chopped nuts, depending on your flavour. Repeat with each of the dates.
  6. Pop the dates into the fridge for at least an hour to set. They can be kept in the fridge for up to a week, and will be chewy and gooey straight from the fridge. For more of a toffee texture, store in the freezer, where they can be kept for up to a month, and remove 15 minutes before eating.
