Veggie Sausage Traybake

Re-Nourish: A Simple Way to Eat Well

Essential Ingredients

400g new potatoes, halved
2 bell peppers, deseeded and cut into strips
1 red onion, sliced
1 courgette, chopped
2 garlic cloves, crushed
1 tsp dried rosemary
2 tbsp olive oil
8 sausages
2 handfuls of cherry tomatoes
To serve: parsley, roughly chopped

Directions

  1. Preheat the oven to 180°c fan assisted/200°c/gas 6.
  2. Arrange the new potatoes, bell pepper, red onion and courgette on a baking tray. Add the crushed garlic, rosemary, olive oil and a little seasoning, then use your hands to mix everything together and combine. Roast in the oven for 20 minutes. 
  3. Remove the dish from the oven and add the veggie sausages and cherry tomatoes. Return to the oven for 25-30 minutes, or until the sausages are cooked and the potatoes are going crispy on the edges. Serve sprinkled in parsley.
