Bagel Traybake

 
 

Simple, no-fuss super nutritious breakfast for all the family in a very inventive way! That’s why I love tray bakes! In this one we use thin bagels as a base and eggs, after that you’re the chef, choose as many delicious combinations and mix your favourite ingredients as toppings!

Ingredients


6 bagel thins
6 eggs
2 tbsp olive oil
Salt and pepper

For the toppings:
Handful of spinach, chopped
8-10 cherry tomatoes, quartered 1/2 avocado 3 tbsp feta cheese 1-2 tsp zaatar


Method


1.
Place bagel thins in a baking tray lined with parchment paper and drizzle with olive oil. Crack the eggs into each of the thins. 

2.

Add all your toppings: spinach, tomatoes, avocado, feta, zaatar, salt and pepper. 

3.

Bake for 10-15 min at 180C depending on how runny you like your yolks.

Serve warm and enjoy!
