Cheesy Aubergine Pizza

 
 

With my family of pizza lovers I’m constantly looking for different ways to add lots of veggies and make them a little healthier for them. These aubergine pizzas are such a cleaver way to sneak some extra veggies into your diet.

PREP TIME 5 MINUTES
COOKING TIME 25-30 MINUTES
DIFFICULTY EASY


Ingredients


1 aubergine
1 tbsp olive oil
1/4 tsp salt
1 tsp dried oregano and basil
4 tbsp of tomato sauce
30g grated cheese 4-5 cherry tomatoes, halved Fresh basil


Method


1.
Cut aubergine in half, score in both directions. Brush with olive oil and sprinkle with salt and dried herbs.

2.

Bake at 180C for 15 min.

3.

Press flesh with a fork, spoon over tomato sauce and spread over surface.

4.

Add cherry tomatoes and cheese, put back in the oven for 10 min.
