Plant Based Pita

 
 

The perfect summer lunch or dinner pulled together in just 5 minutes! Plus it’s full of plant based goodness with protein from the tofu, phytochemicals from the pomegranate and that extra heat from the chilli too.


SERVES 1
COOKING TIME 5 MINUTES

Ingredients


1/3 block of tofu

2 tbsp of hummus

1 pita bread

Handful of rocket

Handful of pomegranate seeds

1/4 cucumber

2 tbsp of maple syrup

1/4 tsp chilli flakes


Method


1.
Chop your tofu into slices.  

2.
Fry with olive oil on both sides and finish with maple syrup and chilli flakes.

3.
Warm you pita breads either in the microwave or oven, spread over the hummus, add the rocket, cucumber in small cubes, sweet and spicy tofu and pomegranate seeds and enjoy!
