Pitta Bread Pizzas

4 pitta breads
4 tbsp tomato puree
1 garlic clove, crushed
½ tsp mixed dried herbs
100g cherry tomatoes, halved
1 bell pepper, small dice
1 red onion, thinly sliced
1 tbsp sugar
1 tbsp balsamic vinegar
Olive oil
60g grated cheese
4 tbsp pesto, optional
Salt and pepper
To serve: fresh basil
