2 Ingredient Banana Cookies
These 2 ingredient, gluten-free cookies couldn’t be easier (or tastier). Perfect for snacking on, adding to lunchboxes or pairing with a cup of tea in the evening.

Ingredients
280 g Almond Flour
168g Mashed Bananas - a bit less than 2 large
Method
1.
Preheat oven to 180°C. Line a large baking sheet with parchment paper.

Peel, mash the bananas in a mixing bowl until it form a smooth puree with small lumps of bananas.
3.
Stir in almond flour, with a spatula first. When it starts to be difficult to stir, knead the dough with your oiled hands until the dough is consistent.
4.
Wash and dry your hands, and lightly oil them with oil. Roll 1 tablespoon of dough between your hand to form a ball.
5.
Place each cookie dough ball onto the baking sheet covered with parchment paper.
6.
Press with the cookies with a fork.
7.
Repeat until all cookies are formed.
8.
Bake for 13-16 minutes or until slightly golden brown on the edges and bottom.
9.
Cool on the baking sheet for 15 minutes before transfer to a cooling rack. The cookies are soft banana cookies and won't firm up much.
