Apple & Blackberry Loaf
This moist and fruity cake is such great way to get kids to eat fruit, you may have trouble stopping them! I love the juicy blackberries and chunky pieces of apple combo but mix and match.

Ingredients
225g + 1 tsp self-raising flour
1 tsp baking powder
140g caster or coconut sugar
1 tsp cinnamon
90ml sunflower oil
180ml plant-based milk
1 tsp vanilla essence
1 large apple, peeled and chopped small
150g blackberries
Glaze:
65g icing sugar
2-3 tsp water
To serve:
fresh mixed berries
Method
1.
Preheat the oven to 160Fan/180*C and line and grease a loaf tin.

Sift the 225g flour into a large mixing bowl and stir in the baking powder, sugar and cinnamon.

In a second bowl, stir together the sunflower oil, milk and vanilla essence. Pour the wet mixture into the flour and stir to combine. Do not over mix.

Toss the blackberries with 1 tsp flour.

Fold in the chopped apple and blackberries. Pour into the loaf tin and bake for 50-55 minutes or until golden brown and an inserted skewer comes out clean.
6.
Allow to cool fully on a wire rack while you prepare the icing by stirring together the icing sugar with 2 tsp of water and add more as needed.
7.
Drizzle the icing sugar glaze over the cooled cake and decorate with fresh mixed berries.
