Apple & Raisin Baked Oats
The promise of warm baked oats is one of the best ways to get me out of bed on these cold mornings. They may take a little longer to make, but totally worth it!

DIFFICULTY SUPER EASY
Ingredients
80g oats (soaked in boiling water for 10 mins, until the water has been absorbed)
1/2 apple
1 tsp cinnamon
Handful raisins
300ml oat milk
Method
1.
Pre-heat the oven to 180°C.

Chop up the apple into small chunks, saving 3 slices for decoration at the end.

Combine the chopped apple with all other ingredients in a bowl and stir well.
4.
Pop the mixture in the microwave for 3 minutes, until it has absorbed much of the liquid and starting to be the consistency of porridge.
5.
Stir again, and transfer it to an oven proof dish or ramekin. Pop the apple slices in the top, and bake for 20 minutes.
6.
Remove from the oven and let it stand for 10 minutes. Enjoy warm.
