Berry Porridge
Regardless of the season I love a bowl of porridge all year round. Here I’ve mashed and warmed through some raspberries and strawberries to make a delicious coulis-style sauce, but you could try it with any berries you fancy!

Ingredients
120g oats
360ml milk (I used almond)
40g milled flaxseed
75g raspberries (fresh or frozen)
4 large strawberries (optional)
Toppings: almonds, granola, berries, yoghurt (natural or almond)
Method

Pour the oats and milk into a saucepan and bring to a gentle simmer until thick and creamy, around 8 minutes. Add in more milk, if needed. Half way through, pour in the milled flaxseed and stir.

Meanwhile, make the berry sauce by mashing the raspberries and chopping the strawberries and placing them in a pan on a medium heat. Simmer for a few minutes until it starts to bubble, and then reduce to a low heat for around 5 minutes. Stir often to ensure it doesn’t stick to the bottom, and remove from the heat once they have reduced down to a thick sauce. Add a splash of water if needed.

Serve the porridge topped with the berry sauce and sprinkle with almonds, granola, some more berries, and a drizzle of yoghurt!
