Blueberry Cookies
Sweetened only with fruit, these oaty cookies are such a fun way to get all the family baking together. Incredibly moorish and bursting with sweet yet tangy blueberries.

Ingredients
3 eggs
2 large overripe bananas, mashed
110g butter, melted
zest of 1 lemon
160g cups rolled oats
85g plain flour
1/2 tsp bicarbonate of soda
120g blueberries
Method
1.
Preheat the oven to 160°c (fan assisted)/180°c/gas 4 and line two baking trays with parchment paper.

Combine the eggs, mashed bananas, melted butter and lemon zest in a large bowl.
3.
Add the oats, flour and bicarbonate of soda into the wet mixture and mix well until everything is combined. Then stir through the most of the blueberries.
4.
Create 12 golf ball-sized scoops of the mixture between the baking tray, then flatten the top of each one. Dot the remaining blueberries between the tops of the cookies.
5.
Bake in the oven for 18-22 minutes, or until golden brown, then transfer to a cooling rack until completely cool. Enjoy!
