Caramel Date Porridge
Sometimes you just need some indulgence in the morning. The delicious caramel flavour of dates makes a breakfast that’s just like pudding, it’s full of fibre and healthy fats too.

Ingredients
120g oats
360ml milk
4 dates, sliced
1 tbsp warm water
3 tbsp maple syrup
2 bananas, sliced
1 tbsp coconut oil
Toppings:
almonds, almond butter, milled flaxseed, yoghurt (natural or almond)
Method

Pour the oats and milk into a saucepan and bring to a gentle simmer until thick and creamy, around 8 minutes. Add in more milk, if needed.

Meanwhile, heat the oil in a non-stick frying pan, and add 2 tablespoons of the maple syrup. Once it is starting to bubble, place the banana slices gently into the pan. After 3 minutes, turn the slices over and fry for a further 3 minutes.

To make the date paste, pop the sliced dates in a food processor with the warm water, and one tablespoon of maple syrup. Blend to a paste.

Serve the porridge topped with the date paste and caramelised bananas. Also top with almonds, almond butter, milled flaxseed, and yoghurt!
