Carrot Cake Porridge
If you love this classic dessert, this ones for you! It’s an easy and delicious way to jazz up your morning porridge, as well as a creative way to get in some more veggies. Finish it with any of your favourite toppings, blueberries, yoghurt and pumpkin seeds go very well on this!

Ingredients
1 medium carrot
90g oats
500ml milk (any kind you like)
1 tsp ground cinnamon
¼ tsp ground nutmeg
2 tbsp raisins
To serve:
yoghurt (dairy-free if needed), blueberries, pumpkin seeds
Method
1.
Coarsely grate the carrot.

Combine the oats, milk, grated carrot, spices and raisins in a saucepan over medium heat. Bring to a simmer, then stir regularly until the porridge reaches your desired consistency.
3.
Pour the porridge out between bowls and top with the yoghurt, blueberries & pumpkin seeds. Enjoy immediately.
