Cheesy Green Pasta Bake

 
 

Packed with veggies and flavour, this beginner recipe is a winner with all the family. Any leftovers keep really well and make a fab lunch hot or cold too!

Ingredients


500g pasta (any kind you like!)
3 medium courgette, grated
250g cherry tomatoes, halved
250g green pesto
1 large handful of spinach
175g cheddar cheese, grated
Freshly ground black pepper


Method


1.
Preheat the oven to 160°c (fan assisted)/180°c/gas 4.

2.
Cook the pasta for according to the packet’s instructions, until just al dente (the pasta will continue cooking in the oven so you want it to still have a little bite at this stage), then drain.

3.
Meanwhile, grate the courgette and slice the cherry tomatoes in half.

4.
Mix the cooked pasta, grated courgette, cherry tomatoes, pesto and spinach together in a large bowl until combined.

5.
Pour the pasta mixture out into a baking dish and sprinkle over the grated cheese. Finish with a crack of black pepper, then bake in the preheated oven for 25 minutes, or until the cheese is melted and bubbling.
