Chickpea Blondies

 
 

These delicious high protein blondies are a game-changer snack or dessert. Packed full of plant-based protein from the chickpeas and healthy fats from the peanut butter, these blondies not only satisfy your sweet treat tastebuds, but also keep you satiated.

Ingredients


1 tin of chickpeas, rinsed and drained

125g smooth peanut butter

80ml of maple syrup (or honey)

pinch of salt

2-3 TBSP milk

1 tsp baking powder

60g dark chocolate chips

Handful of raspberries


Method


1.

Preheat the oven to 200c

2.

Grease a small square baking dish.

3.

Add all the ingredients except the chocolate chips and raspberries to a blender

4.

Stir in the chocolate chips, spread in the baking dish and finish with some raspberries and extra chocolate chips

5.

Bake for 15-18 minutes

6.

Slice when cooled
