Easy Pad Thai
An easy recipe for Pad Thai with simple accessible ingredients but lots of flavour! It takes 15 min to prep and 15 minutes to cook! Homemade Pad Thai is a quick and healthy alternative to a regular takeaway meal.

Ingredients
4 ounces dry pad thai noodles 6-8 ounces of tofu, cubed
1 teaspoon tapioca starch
1 chopped chilli
1 teaspoon chopped ginger
2 carrots, chopped into sticks
2 pepper, sliced
Salt and pepper Sauce: 3 tablespoons fish sauce, 1 tablespoon tamarind paste, 3 tablespoons brown sugar, 3 tablespoons rice vinegar, 1 tablespoon soy sauce Garnish: lime, peanuts, spring onions, coriander
Method
1.
Mix sauce ingredients and set aside. Cover the rice noodles with boiling water for 7-8 min.

Mix tofu, tapioca starch and a pinch of salt and fry, set aside.

Fry shallot and chilli with ginger and sesame oil, add carrots and peppers. Make a whole in the centre and add beaten eggs, scramble them and break in little bits.
4.
Add the drained, semi-soft noodles and toss. Add the Pad Thai Sauce and cook 1 minute.
5.
Squeeze with a little lime juice. Garnish with spring onions, coriander, chilli, lime wedges and roasted crushed peanuts.
