Halloumi & Veg Frittata

 
 

A loaded frittata is a great way to pack veggies into your brekkie. I love mixing in some halloumi, but you could choose any veggies and fillings you fancy for a healthy start!

Ingredients


Olive oil
6 eggs
4 slices halloumi
60g peas, cooked
Handful kale, chopped
6 cherry tomatoes, sliced
1/3 red pepper, diced
Black pepper


Method


1.
Pre-heat the oven to 180°C.

Dry fry the halloumi in a small non-stick frying pan, for 2 minutes each side. Once cooked leave to cool before slicing into cubes.

Whisk the eggs together in a bowl, then add the peas and kale. Add black pepper to taste. If you are not using halloumi, add a pinch of salt too.

Drizzle some oil into a frying pan or skillet, and pour in the egg mixture. Sprinkle the halloumi pieces on top, along with the red pepper and tomatoes.

Fry on a low heat until the edges start to firm up, but it is not completely set. Then transfer to an oven tray and bake in the oven for 10 minutes, until it is firm and springy. Enjoy warm with toast!
