Halloumi & Veg Traybake
This has to be one of my most go-to recipes I make at home. It’s packed with vibrant veggies, adding to your 5-a-day and couldn’t be simpler to rustle up.

Ingredients
5 new potatoes, halved
1 red pepper, thickly sliced
Handful cherry tomatoes
½ red onion, thickly sliced
1 tsp olive oil
½ block halloumi, thickly sliced
2 tbsp green pesto
A handful of basil leaves
Salt & black pepper
Method

Toss the new potatoes, red pepper, cherry tomatoes and red onion in a small bowl with 1 tsp of olive oil and a little salt & pepper. Arrange them onto the air fryers baking tray, then air fry at 200°c for 15 minutes.

Remove the tray and add the sliced halloumi into the gaps. Return to the air fryer for a further 5-10 minutes, or until the halloumi is golden and the veg is cooked through.

Serve dolloped with the pesto and scattered with the basil leaves.
