Lemon & Poppy Seed Toast
When I have a little extra time in the morning I love to make French toast – the texture is delicious, and you can experiment with adding all kinds of different flavours to infuse the bread.

Ingredients
4 slices seeded bread
2 tbsp ground flaxseeds
150ml milk (I used oat)
1 tsp cinnamon
1 tsp vanilla extract
Juice 1 lemon
1 tbsp poppy seeds
1 tbsp coconut oil
Handful berries
Drizzle maple syrup
Method

Mix the flaxseeds and oat milk together in a bowl and leave to stand for 5-10 minutes to thicken.

Once starting to thicken, stir in the cinnamon, vanilla extract, lemon juice and poppy seeds. The seeds and cinnamon will hover at the top, so stir well.

Pour the mixture into a shallow dish. Gently place each slice of bread into the mixture for only a second or so each side, so it is lightly covered in the milk but not submerged. It should be lightly moist but not wet.

Pop a frying pan on the heat with a little coconut oil and fry the soaked bread for 2 minutes each side, until golden.

Serve with berries, a drizzle of maple syrup, and some yoghurt if you fancy!
