Loaded Nachos
Add more to a classic dish & increase the diversity of plants you feed your gut! Nachos are great for sharing with friends and family! I love doing them with tortilla chips, melted cheese, smokey black beans, avocado and pico de gallo, all the flavours taste amazing together!

Ingredients
1 bag of tortilla chips
1 avocado cubes
2 fresh chopped tomatoes
1/2 red onion finely chopped
Juice of 1 lemon
1 can of black beans
1 tsp smoked paprika
1/2 can of chopped tomatoes
1 vegetable stock cube
2 handfuls of grated mozzarella
Pickled onions
2 tbsp chopped coriander + more for topping
Method
1.
Add to a pan the black beans without draining, canned chopped tomatoes, vegetable stock cube and smoked paprika. Cook and reduce for about 15-20 min at medium heat, most liquid should be absorbed (add more salt if needed)

Make your pico de gallo: mix fresh chopped tomatoes, red onion, lemon juice, coriander and salt

Layer the tortilla chips in a baking tray and cover with grated cheese, grill for 5 min or until cheese is melted
4.
Add in layers: black beans, pico de gallo, cubed avocado, pickled onions and coriander
