Mackerel Salad
Affordable tins of fish like mackerel are a good protein and healthy fat source. Thrown together with veggies and mixed grains, you’ve got a lunch box fuelling your mind and body!

Ingredients
250g quinoa, rice or mixed grains
250g smoked mackerel
80g spinach
10 cherry tomatoes
60g sun-dried tomatoes
60g black olives
30g feta cheese
Sprinkle of sunflower seeds
Method

Cook the grains according to pack instructions. Once cooked, and while hot, mix in a large bowl with the spinach so it wilts down. If microwavable, these already contain olive oil, so the spinach will wilt better. If cooking the grains from scratch, drizzle with some olive oil when adding the spinach.

Shred the mackerel fillets with a fork, removing the skin. Add the shredded mackerel to the bowl with the spinach and grains, tossing to coat. Slice the tomatoes and olives and add to the bowl.

Serve on a plate to eat warm, or pour into your lunchbox – or both! Sprinkle with feta and sunflower seeds, if using.
