Pea & Asparagus Pasta
Serving up all the fresh spring flavours with this peas and asparagus pasta! It’s tossed in an easy creamy sauce easily adapted using non dairy alternatives. Add some spinach, asparagus, peas, or whatever spring veggies you’d like and you’ll get a delicious speedy lunch.

Ingredients
8 ounces pasta of choice 1 bunch of asparagus (~12 stalks), cut into 2-inch pieces
80g peas
60g double cream or alternative
1 tablespoon thyme leaves
Handful of spinach
Olive oil
Salt and pepper Peel of 1 lemon
Method
1.
Cook the pasta al dente according to package instructions.
2.
Heat 1 tbsp olive oil in a medium saucepan over medium heat. Fry asparagus with salt and pepper.
3.
Add cream cheese, cream and thyme. Mix until combined, simmer for one minute.
4.
Add pasta, peas, handful of spinach and cook until spinach is wilted. Finish with lemon peel.
