Pea & Avocado Toast

Ingredients
200g frozen peas, thawed
1 bunch fresh coriander, leaves and stem (10-15g)
1 garlic clove
1 tbsp lemon juice
1 tbsp olive oil
Salt and pepper
4 tbsp mixed seeds/pine nuts
2-4 avocado, sliced
4-8 slices toast
To serve: pomegranate, chilli flakes, coconut yoghurt
Method
1.
Add the thawed peas, fresh coriander, garlic, lemon juice, olive oil and some salt and pepper to a blender or food processor and blend to a chunky paste.
2.
Heat a non-stick frying pan and add the mixed seeds/pine nut. Toast on a medium high heat for 5 minutes until turning golden.
3.
Top the toast with the sliced avocado, the smashed peas and the toasted seeds. Add on some pomegranate, chilli flakes and some coconut yoghurt.
