Pitta Bread Pizzas
Quick and easy homemade pitta bread pizzas with sticky balsamic caramelised onion, lots of vegetables and cheese. They make a great lunch or dinner for the family.

Ingredients
4 pitta breads
4 tbsp tomato puree
1 garlic clove, crushed
½ tsp mixed dried herbs
100g cherry tomatoes, halved
1 bell pepper, small dice
1 red onion, thinly sliced
1 tbsp sugar
1 tbsp balsamic vinegar
Olive oil
60g grated cheese
4 tbsp pesto, optional
Salt and pepper
To serve:
fresh basil
Method
1.
Heat some olive oil in a frying pan and add the red onion. Fry for 10 minutes until soft and add the sugar and balsamic vinegar and cook for 5 minutes.

Stir together the tomato puree, garlic, mixed herbs, salt and pepper.

Preheat the oven to 180Fan/200*C. Place the pitta bread on a lined baking tray and spread with the tomato sauce. Top with the onion, tomatoes, pepper and cheese. Add on some pesto, if using. Bake for 15 minutes until cooked and the cheese has melted.
4.
Top with fresh basil, if you like.
