Rainbow Veggie Traybake
Make meal preparation easy, healthy and delicious with this veggie traybake. It’s the perfect way to get lots of nutrients from different veggies in one bowl. The addition of chickpeas makes this filling and served with rice this is perfect as a main dish too!

Ingredients
1 head broccoli (cut into florets) 1 red bell pepper (cubes) 1 green pepper (cubes) 2 carrots (cut into coins)
1 can of drained and rinsed chickpeas 1 red onion (in large cubes)
2 tablespoons olive oil
1 teaspoon salt
For the dressing: 1 tbsp whole grain mustard 3 tbsp of honey cider vinegar A pinch of salt 1 tbsp olive oil
Method
1.
Preheat oven to 180C. Cut all of your vegetables.
2.
Place vegetables in a large baking tray creating a rainbow. Drizzle with oil making sure all of the vegetables are covered.
3.
Sprinkle with salt and pepper before cooking. Bake for 35-40 minutes.
4.
Mix all the ingredients for the dressing and drizzle on the top of the veggies. Mix and serve.
