Raisin Lactation Cookies

 
 

Soft and chewy with a squidgy middle, these are ridiculously easy to make. What’s more, for mum’s like me, they’ll give us a much needed energy to help keep milk supplies topped up!

Ingredients


2 tbsp ground flaxseed + 5 tbsp water
100g oats
50g oat flour
½ tsp baking powder
½ tsp bicarbonate of soda
1 tsp cinnamon
40g melted coconut oil
60g coconut or other sugar
1 tsp vanilla
50g raisins


Method


1.
Preheat the oven to 160Fan/180°C and line a baking tray with parchment paper.

Mix together the flaxseed and water and set to one side to thicken for 10 minutes.

3.
In a large bowl stir together the oats, oat flour, baking powder, bicarbonate of soda and cinnamon.

4.
In a second bowl stir together the flaxseed mixture, melted coconut oil, sugar and vanilla. Pour over the dry mixture and stir together until combined. Fold in the raisins.

5.
Use a spoon or ice cream scoop to shape the cookie dough into balls and flatten down slightly with your hands onto the tray.

6.
Bake for 10 minutes until golden and allow to cool on a wire rack.
