Baked Blueberry Oats

 
 

If you’re tired of porridge bowls, switch up your oats with squares sweetened only with fruit. A fab morning recipe for everyone in the family, or great as a pudding or snack.

Ingredients


4 large ripe bananas, 1 sliced and 3 mashed
60g butter, melted
300ml milk
1 large egg
300g jumbo oats
1 tsp baking powder
½ tsp cinnamon
125g blueberries

To serve:
yoghurt


Method


1.
Preheat the oven to 160°c (fan assisted)/180°c/gas 4 and line a square baking tray or brownie tin with parchment paper.

Mix together the mashed banana, melted butter, milk and egg in a large bowl. Add the oats, baking powder, cinnamon and stir to combine. Add 3/4 of the blueberries and mix those through too.

Pour the oat mixture into your lined baking dish, then top with the one sliced banana and remaining blueberries. Bake for 25-30 minutes, or until golden and risen. Allow to cool slightly before chopping into squares and serving with yoghurt. You can also cool these completely and eat cold or reheat for a quick breakfast!
